Classic Tokaj wines
Tokaj wines are known mainly thanks to their pilgrimage wines , the so-called Tokaj selection . These wines are produced using the traditional oxidative method from Tokaj grape varieties: Furmint , Lipovina and Yellow Muscat . An integral part of production are hand-picked grapes - healthy grape berries attacked by a noble form of Botrytis mold cinerea . This mold breaks down the skin of the berry, causing water to evaporate and sugar to concentrate. Cibéby are unique and can only be found in the Tokaj wine region , and they are not formed every year, which makes pilgrimage wines so rare.
The name " putňa " comes from historical wooden baskets that could hold approximately 25 kilograms of grapes. According to the number of pilgrims added to the so-called of the Gön barrel (136 litres), there are three to six wines. The Tokaj selection must be aged in a wooden barrel for at least three years, of which at least two years in a traditional tuff cellar.
In addition to selections, the classic Tokaj wines also include native wines. They are made from Tokaj grape varieties without picking the grapes , i.e. from the bunches as they were "grown". Natural wines are aged for at least two years, of which at least one year is in a tuff cellar.
The absolute highlight of Tokaj wines is Tokajská essence , an extract obtained by fermenting the grapes themselves . Tokaj wines are made exclusively from Tokaj grape varieties by oxidative technology, and their production is strictly limited to the precisely defined territory of the Tokaj wine-growing region, where Tokaj grapes can be grown and Tokaj wine can be produced.
